With the (GI) glycemic Index of Waxy Maize (WM) being 58 @ 2 hrs post consumption (vs. Maltodextrin 106 @ 2 hrs) and 64 @ 4 hrs post consumption (v.s Maltodextrin 89 @ 4 hrs), this unique carbohydrate source has been shown to provide continuous steady glycogen replenishment for muscles with only modest insulin spikes. Additionally, WM has been shown to have a higher molecular weight and osmolarity than either dextrose or maltodextrin. The benefits to this structure may allow it to move through the stomach quickly (gastric emptying) to the intestines for it to be assimilated. Anecdotally, overwhelming online reports claim rapid absorption of aminos and other ingredients with use of waxy maize due to the nutrient shuttling effect of gastric emptying. Cellulase are a class of enzymes that are derived from bacteria, fungi, and protozoans that catalyze the cellulolysis of cellulose.
